A delicious meal that is vegan, healthful and life-sustaining is a lifestyle choice that I strongly encourage for my clients.
One of my favorite recipes for a spicy kick is Chipotle Roasted Brussel Sprouts.
I was and marinate brussel sprouts in Chipotle seasonings and olive oil overnight. Spread evenly in a baking dish, I roast for 30 minutes at 350 degrees.
Served over brown rice, brown fried rice or brown rice risotto, this is a very delicious and filling meal with a side salad and roasted red and yellow peppers. All organic, of course.
